Sometimes It’s the Simple Things
Have you, like me, made so many grilled cheese sandwiches for your kids that you feel like if you never saw another one you’d be totally fine with it? That’s how I felt about grilled cheese before last weekend.
I went to Ventura to attend a swim team alumni event. I spent the weekend catching up with friends while visiting the town I grew up in. I stayed with neighbors who still live next door to my childhood home.
On Sunday afternoon, when Mary went through the list of lunch options and got to grilled cheese, my first thought was, Um … no. But then she kept talking. “I have some garlic butter and some sourdough bread.” She told me. “I can use havarti.”
“Okay, that sounds good!” I agreed. A much better option than the American cheese on wheat that I serve my kids.
Five minutes later I sat at the table wondering how I have made a countless number of grilled cheese sandwiches for my kids and never have I ever thought to do this! It is absolutely delicious, quick, easy, and something that isn’t that big of a departure from the grilled cheese I am making for my kids anyway.
If the skillet is already out … go for it!
The next time your kid says they want a grilled cheese sandwich, grab some butter garlic spread (sold next to the butter at the store), or some butter and minced garlic, your favorite bread, and your favorite cheese. Grill your kids their grilled cheese (or as my son calls it, cheesy toast) and then kick yours up a notch and sit down with them and enjoy your meal.
You really can’t go wrong. The garlic spread is the trick here. You can buy it or you can make your own (whisk together olive oil, butter, minced garlic, finely chopped parsley and oregano).
Assemble the sandwich exactly the same way you would a traditional grilled cheese sandwich: Spread the butter mixture onto the outside of the bread, place butter side down on the skillet (medium heat), place the cheese of your choice in between the slices and grill on both sides until cheese has melted in the middle.
Cut in half and add a garnish if you wish. I put avocado on mine!
