Peanut Podi – Peanut Chutney – Peanut Powder – Palli Podi-

Spicy Verkadalai Podi –Verkadalai Chutney -Yummy Peanut Sprinkle – 

Whatever you want to call this stuff it is so good!!! It is super flavorful and easy to make.  You can put it on rice with yogurt for a snack. You can have it on a meal with rice, idli, dosa’s, or sprinkle it on top of curry. I’ve even put it on Thai food! It’s a great thing to have ready when you need just a little more flavor on something and don’t want to do a lot of extra cooking.

We just visited my in-laws last week and my father-in-law made me a huge batch to bring home with me. He makes a wonderfully spicy peanut podi. It’s going on everything this week! It’s a dry, spicy, peanut chutney that I love!

 

Peanuts – 2 cup

Coriander seeds – 4 tsp

Cumin Seeds – 2 tsp

Red Chilies – 8-10

Garlic cloves – 6

Salt to taste

Oil – 1/2 tsp

 

Put peanuts in a pan and dry roast (no oil in pan) on medium heat. Stir constantly until the skin starts to change color. Remove from heat. Leave it to cool. The skin will come off easily. Separate the peanuts from the skin by rubbing them with your palms. Set aside in a bowl.

 

Dry roast coriander seeds and cumin seeds separately in a pan. Pour out and keep separate.

 

Heat a pan with oil, add red chilies. Switch off the heat and add the garlic.

 

Grind the red chilies, coriander seeds and cumin seeds to a coarse powder. Then add the roasted peanuts, garlic and salt. Grind everything together until course.

 

Keep it in an air tight container.
