Oatmeal Jam Squares
I loved eating these as a kid and I still love them. This recipe has been used in my family as long as I can remember. These jam squares are still a hit.
2 cups oats, uncooked (quick or old fashioned)
1 ¾ cups flour
1 cup butter
1 cup packed brown sugar
½ cup chopped nuts (I like to use pecans, but you can really use any nut you enjoy)
1 tsp cinnamon
¾ tsp salt
½ tsp baking soda
¾ cup preserves (I use different preserves depending on my mood. You can use any jam that you would use for pb&j)
-Combine all ingredients except preserves.
-Beat at low speed until crumbly.
-Set aside 2 cups of the mixture.
-Press remaining onto the bottom of greased 13×9 pan.
-Spread preserves evenly over base.
-Sprinkle with reserved mixture.
-Bake in preheated hot oven – 400 degrees for 25 to 30 minutes or until golden brown.
-Cool and cut into squares.
