There are some little fingers in my picture….

“Come on Mommy! Take the picture so we can eat!”

 

3 eggs

½ cup flour

½ cup milk

3 TBS butter

 

½ cup water

½ cup sugar

2 TBS lemon juice

3-4 apples

 

Heat oven to 450 degrees.

Beat eggs slightly (1 min)

Add ½ cup flour

Beat until mixed

Add ½ cup milk and beat until mixed

 

Melt butter I heavy ovenproof skillet (cast iron is perfect). Tilt skillet to coat bottom and sides with butter.

Add remaining melted butter to mixture and stir to incorporate.

Pour mixture into skillet.

Bake 15 minutes

Lower temperature to 350 degrees and bake 10 minutes more.

 

Meanwhile – on the stove

Bring water, sugar, lemon juice to boil, stir to dissolve sugar.

Add apples, cover and simmer about 5 minutes.

Place apples on pancake when you remove it from oven.

Sprinkle with powdered sugar.
