Life Happens. Sometimes you just have to write about it.

This is a wonderful side dish to add to any meal. It is flavorful and fresh. If you want to spice it up, you could roast and use fresh Anaheim chiles with the seeds incorporated.

2 – 10oz packages of frozen corn

2 TBS butter

1 8oz package of cream cheese

1 4 oz can of green chiles, chopped

-Cook corn according to package and drain.

-Melt butter over low heat.

-Add cream cheese and stir until blended.

-Stir in corn and chiles.

-Spoon into a lightly greased 1 qt. baking dish.

-Cover and bake at 350 degrees for 25 minutes.

-Salt to Taste. Serve warm.
